I can’t. stop. baking! I don’ t know what my problem is, but for some reason, the comfort of the kitchen has been luring me in with its Siren song all week. Since Sunday I’ve made the Nectarine Cobbler with Blueberry Muffin Crust, a batch of homemade hamburger buns which we ate with grilled-out burgers (it was amazing), and then yesterday I whipped up a batch of life-changing bread. And it’s only Wednesday. This doesn’t bode well for the rest of the week. Must. Keep. Running!

Anyway, about the bread… Several years ago, while living in Raleigh, I came across a girl who sold Tastefully Simple. I really don’t even remember exactly how we met (I think we were both doing a vendor show…her for Tastefully Simple and me for my photography business), but I’m not a huge fan of those party-based sales businesses, and I’d heard that while some of the Tastefully Simple products were good, they were pricey. And once I saw the catalog, I had to agree. But I somehow got to try their Bountiful Beer Bread mix, and oh my word, it was amazingly good and super simple to make! They had me. So I bought the giant value pack of beer bread mixes, which I think had three mixes for some insane price like $15.00, which is completely ludicrous when you find out that you still have to add your own can of beer and butter to each mix. Not exactly cost effective. Especially for something that should be simple and inexpensive, like bread. I used those mixes and never bought it again, but never forgot about how yummy that bread was.
Enter Pinterest onto the scene. While browsing my Things to Bake board earlier this week, I came across this recipe for a Tastefully Simple Beer Bread copycat. I don’t even remember pinning it. Until that moment, I had forgotten all about this marvelous bread, but then of course I had to make it. Immediately. After the last couple of disappointing recipe trials, and seeing as how I had super high hopes for this bread, I was a little hesitant. Could it really be as good as the Tastefully Simple one? I gotta say, every single copycat recipe I’ve ever made, ever, has never been like the original recipe it was intended to mimic. Until now. Holy smokes, this bread is a dead ringer for the Tastefully Simple Bountiful Beer Bread…and so easy (not to mention so much less expensive)! I always make it with either Sprite or ginger ale, and it comes out perfect. Seriously, make this. Like, now. This is definitely on my list of things to take the next time I sign up to bring someone a meal.
